Jitiya Vrat will be observed on 14th September this year. It is mainly celebrated in some areas of Bihar, Jharkhand, and Uttar Pradesh. Mothers observe this fast for the long life of their children. On this day, mothers observe a Nirjala fast throughout the day, and Lord Jimutvahana is worshipped. A day before this fast, there is Nahai-Khaai, on which day women eat Noni Saag (Jitiya Vrat Food Recipe).

How to make Noni Saag?
Ingredients-
1 bunch noni saag
2-3 green chillies
Cumin and fenugreek seeds
Turmeric powder
Salt to taste
Mustard oil
2 dried red chillies
Method of preparation-
First of all, clean and wash the noni saag thoroughly. Tear off its leaves and finely chop the green chillies.
Now chop the noni saag finely.
After this, heat some mustard oil in a pan. When the oil is hot, add cumin and fenugreek seeds to it. When both of these are roasted, add chopped green chillies to them. If you want, you can also add dried red chillies to it.
After this, add chopped noni saag and salt and turmeric to the pan as per taste.
Mix the saag well so that the salt and spices get mixed in it.

Cover the pan and cook the saag on low flame till it becomes soft and its water dries up. It will take about 5-10 minutes. Keep stirring the saag in between so that it does not burn.
When the saag is cooked well and the water dries up, turn off the gas.
Noni ka saag is ready. Eat it with madua roti.
